Pumpkin Oat Energy Snack
- 2 cups rolled organic oats
- 1 cup organic pumpkin puree
- ½ cup of almond butter
- 4 tbsp of honey
- 2 tsp of cinnamon
- 4 tsp of chia seeds
- ½ of mini dark chocolate chips / raisins / or chopped walnuts
- Mix all ingredients in a bowl until well combined
- Chill 20-30 minutes
- Roll in shredded coconut or a in variety of finely mixed chopped nuts
