Holiday Oatmeal Date Bars
You can top off these tasty bars with a drizzle of your favorite vanilla cream cheese icing for a decadent festive touch! Best of all? They provide a jumpstart energy boost that sustains without a sugar crash.
INGREDIENTS FOR FILLING:
- 2-1/2 cups of medjool dates that have been diced and pits removed
- 1 cup of water
- 2 tbsp of fresh lemon juice ( approx. juice from one med lemon
- 1 tsp cinnamon
- 1 tsp lemon zest
- ½ tsp baking soda
INGREDIENTS FOR CRISP
- 1-3/4 organic old fashioned quick oats
- ¼ -1/3 cup of granola
- 1 cup flour
- ½ cup raw brown sugar
- 1 tbsp of honey
- 1 stick of Earth balance vegan baking butter + 2 tbsp
- ¼ tsp baking powder
DIRECTIONS
- Preheat over to 350 degrees
- Place all ingredients for filling EXCEPT the baking soda into a medium sauce pan and bring to a boil. Boil for about 5-8 minutes until the dates break down. Add the baking soada and stir well and then remove from the heat.
- Place all the ingredients for the crisp into amedium size bowl and mix well.
- Line an 8×8 baking dish with parchment paper
- Pour halftheoat mixture into the bottom of the pan and gently push it down.
- Pour on the date filling , using a spatula to spread it out evenly over the bottom of the oat crisp
- Add the remaining oat crisp on the top of the date filling .
- Gently press down
- Bake for 30-38 minutes
- Allow approx.1 hour to cool before cutting and enjoying
