Blue Zone Chickpea Salad
Serves 4- 6
INGREDIENTS:
1 – 14 oz Chickpea drained and rinsed
1 – 14 oz Cannelli Bean
1 – red bell pepper sliced or chopped
½ cup of fetta cheese crumbled
1 -1/2 cup of diced green onions
½ of one red onion diced
¼ cup of each: parsley and dill minced
2 tbsp mint minced
2 medium tomatoes diced
DRESSING: Whisk together the following
1/2 cup olive oil / ½ tbsp dried oregano / ½ tsp salt
¼ tsp pepper/
¼ cup of lemon juice or the juice of ONE lemon
½ tbsp red wine vinegar / 2 small garlic cloves chopped
DIRECTIONS:
- ADD all salad ingredients to a bowl
- Drizzle dressing over the salad that has been lightly tossed.
- Serve this as a side dish OR served over a bed of chopped romaine
