Healthy Oatmeal & Banana Pancakes
My honey loves oatmeal and he loves pancakes. This way he gets to eat his pancake and have his oatmeal too! Oats are among the world’s healthiest grains and a good source of many vitamins, minerals, and unique plant compounds.
INGREDIENTS
2 medium ripe bananas
2 whole eggs
1 tsp of pure vanilla extract
1-1/2 cups old fashioned gluten free rolled oats
2 tsp on baking powder
½ tsp cinnamon
¼ tsp nutmeg
Pinch of sea salt
Extra Virgin oil for cooking / coconut oil or vean butter
INSTRUCTIONS
- Lightly coat your iron skillet with coconut oil OR extra virgin olive oil OR vegan butter
- ADD all of the ingredients to a blender and blend on high until the mixture is completely smooth. Let the batter sit in your blender until you heat up your iron skillet
- Once pan is hot pour about 1/3 cup of batter into the griddle for each pancake . Cook each side between 2-4 minutes until they puff up and have bubbles. If too brown you can decrease heat.
- Makes about 9 pancakes total
OPTIONS
Substitute whole eggs for whites only (about ¼ cup )
Substitute bananas for 1/3 cup of applesauce
TOPPINGS…..YOU DECIDE contingent on much additional sugar calories you may want. (you can freeze these by placed on a sheet and placing them in freezer for 30 minutes. Then remove and place in an air tight container. They will stay for up to 3 months. Simply re-heat in micro for 30 to 60 seconds
