Fall Apple-Pumpkin Baked Oatmeal
This is a perfect recipe for an early weekend Fall Brunch. The best part is you can’t mess it up! Watch the video and you will know why.
INGREDIENTS
2-1/2 cups organic old fashioned rolled oats
1- 15 ounce can of organic pumpkin puree
1 cup of almond milk
1 Large granny apple (or if you want sweet a red delicious apple) Peeled & chopped
2 Large eggs slightly beaten or ( ½ cup of egg whites)
2 tsp. of pumpkin pie spice
2 tsp. of pure vanilla extract
1 tsp. baking powder
STEPS
1. PREHEAT YOUR OVEN to 375 & spray and 8 inch pan with baking spray
2. Stir all your ingredients together in a large bowl. Make sure that your eggs have been slightly beaten before adding to the other ingredients. I like to use a spatula for stirring.
3. Bake at about 35 minutes.
4. Serve warm and top with one or of the following choices below
TOPPINGS
Chopped walnuts, yogurt, fresh berries and honey. ( if you truly like sweet add blueberry syrup) One OR ALL!
