White Bean Sausage and Skillet!
July 13th has become a stellar National Culinary Celebration because what American has not
loved to eat a Dodger Dog? OR
Grill franks over a campfire ? Not to mention celebration of the side dish beans on the 4 th of
July.
I decided to explain that franks are primarily pork only, hot dogs traditionally have been pork
and some sort of beef, while sausages are pork with a mixture of other meats. Thank goodness
the health community has made its mark in the food industry, because today we can obtain
franks that are gluten free, and no additional preservative and additives…hence on the market:
Apple chicken sausage
Red pepper sausage
The Austrian and Germans still quarrel to this day who make the 1 st frank. But everyone agrees
that the American hotdog celebrated on Coney Island back in the early 1900’s is credited to the
Germans bringing their fav dish to New York. Below is my HEALTHY version of CELBRATING THIS
DAY!
WHITE BEAN AND CHICKEN SAUSAGE STEW
( SERVES 4 )
2-3 tablespoons of Extra Virgin Olive Oil
4 Large Apple-Chicken Sausage PRE-cooked ( TJoe’s or Whole Foods Brand Organic Brand )
3 large garlic cloves
2-15 oz cans of organic white cannellini beans, rinsed and drained
1 cup of water
½ cup of white wine ( chardonnay or pinot gris)
1 package of veggie bone broth protein powder ( Isagenix brand works great!!)
½ tsp of sea salt
¼ tsp lemon pepper
1 tsp of dry thyme leaves
½ bunch of curly kale, (stems removed leaves torn into bite size pieces –ab out 3 cups)
½ of the juice from a fresh squeezed lemon
½ cup of parmesan cheese ( a little extra for topping later)
Optional – fresh red pepper flakes
STEPS
Warm your iron skillet at low temp and heat olive oil and garlic until the garlic is light
toasted.
Add your wine, water and bone broth and spices. Stir until dissolved about 5 minutes
Add 2/3 cup of the beans to the skillet and lower to simmer.
While broth is on sim, smash remaining beans with a meat smasher or fork until a paste
is formed ..once done add to skillet
Add kale and still for about another 2-5 minutes
Add your sausage and lemon juice
Top your ingredients with the parmesan cheese leaving a little for final topping
Cover skillet and cook on low for another 5-10 minutes
Complete the dish by placing in oven on lo broil (uncovered) topped with remainder of
cheese for an additional 10 minutes
Serve hot with your favorite cracker or parmesan crisp
