Two Color Crunchy Cabbage Salad
Cabbage is highly nutritious vegetable…..rich in vitamin C, fiber, and vitamin K. Since Americans are so focused on their health in the beginning of any New Year. This was the perfect dish for me to serve at my 2024 Vision Board Party.
Bonus: The color is energetic, and green is hope = healthy gut and body
INGREDIENTS
1 Small purple whole cabbage
1 Small green whole cabbage
1 cup of green onions sliced thinly with some of the green tops
2 tsp of coarse black pepper
2 tsp of seasoned salt
1 tsp of lemon pepper seasoning or your special seasoning
5 Tbl. Black or white sesame seeds
½ cup of extra virgin olive oil
½ cup of red wine vinegar
¼ cup of organic maple syrup or honey
1-1/2 cups of chopped pears or apples that have sat in lemon juice overnight
STEPS
- CUT off the end piece of your cabbage. Then Cut into wedges and make sure you rinse well each wedge pat dry with paper towel or your kitchen towel
- Cut wedges into sliced and or chopped pieces
- Put all your seasonings along with the olive oil, vinegar and syrup or honey into a glass jar with lid and shake well …. If you like garlic …open and add 1-2 cloves of minced garlic
- Take your pears or apples that have sat overnight and rinse well in colander.
- Fold in gently your fruit and add the dressing. Toss well . Serve immediately.
**note you can refrigerate and keep tossed salad for 2-3 days. You can prepare cabbage and fruit prior and keep them in refrigerator for up to 5 days if sealed tight. Then toss with dressing when ready.
