Breakfast Munchie
This is simple yet elegant for your UPCOMING Holiday Weekend Brunch!
Banana BREAD Protein Muffin
Ingredients:
1 Cup of steel oats or organic oat bran
1/4 cup of BANANA BREAD Protein Shake powder
2/3 cup of organic coconut flakes
2 teaspoons of baking powder
1 teaspoon of cinnamon
2 small or medium very ripe bananas, mashed
½ cup unsweetened applesauce
½ cup organic plain yogurt OR ¼ cup almond milk
2 large egg whites
Instructions:
- Preheat oven to 400 degrees. Prepare your muffin pan or line with paper muffin cups
- In medium bowl whish together all dry ingredients.
- Set aside
In large bowl, mix mashed banana, apples sauce & yogurt, slowly add egg whites and vanilla until well combined and smooth. Add wet ingredients to dry ingredients and mix until just combined. Let batter sit 2 minutes to thicken a bit.
- Divide batter evenly into muffin cups (OPTIONAL: top with a crumb mix of chopped walnuts, one scoop of chocolate IsaPro whey protein & soft organic butter)
- Bake 15 minutes. Serve warm and spread with almond butter if you need more yummy
