Bailey’s Almond Butter Cupcake
INGREDIENTS
1 deluxe Chocolate “365” Cake mix
¾ cup of water
2 organic whole eggs (or 3 egg whites)
1 8-ounce cup of unsweetened applesauce
INSTRUCTIONS
CAKE MIX
- Mix and Bake as directed on package
- Should make about 18 cupcakes
BAILEY’S ICING
- 4 ounces of dairy free whipped cream cheese
- 1 tsp vanilla extract
- 1 scoop of Isalean Vanilla Protein Powder OR Crème Brulee
- 6 tbsp Tru-Whip “skinny” Whip cream
- 1 large tbsp. full of almond butter
- 3 tbsp of Bailey’s Irish Cream Liquer
- 1 scoop of Powdered sugar (about 3 tbps )
- While cupcakes are cooling, combine all the ingredients for icing in mixing bowl.
- Mix until well blended.
- Add a touch more Baileys for fluff if necessary
- Top with fresh green mint tea or
- A garnish of green icing or green cake confetti!
