My Experiment in the Kitchen
I had some left over red and green grapes and decided to experiment with them in a batch of grape muffins.
Preparation: Using regular paper cup liners sprayed with organic baking oil as a substitute for non-stick liners.
Wet Ingredients:
- 1 cup of coconut brown sugar.
- ½ cup of melted vegan butter.
- 1 teaspoon of vanilla extract.
- 2 eggs.
- 1 cup of almond milk.
- Whisk these ingredients together until well combined.
Dry Ingredients:
- 2½ cups of all-purpose flour.
- 1 tablespoon of baking powder.
- 1 teaspoon of baking soda.
- A pinch of Himalayan salt.
Whisk these ingredients together.
Combining Ingredients: Add the wet mixture to the dry mixture, stirring until blended, even if slightly lumpy.
Adding Grapes: Incorporate about 1¾ cups of halved seedless grapes into the batter.
Baking: Use an ice cream scoop to fill the muffin cups and bake at 375°F.
